Stainless steel: A sandwich design consists of one layer of aluminum or copper sandwiched between two layers of steel. Considering the light weight of aluminum, it is very easy to get it really hot and it can distribute the heat extremely well. In terms of durability and heat holding capacity, steel is great, but it is also heavy, slow to heat up, and it does not distribute heat well either. You get the even heat distribution that aluminum is known for along with the durability and heat retention that steel is known for when cooking with a tri-ply pan. All tri-ply pans are fully clad with an aluminum core that extends all the way to the top and beyond. 

Aluminum: While aluminum has excellent heat-conduction properties and is lightweight, it is not ideal for use as a stand-alone skillet. Cast aluminum is extremely reactive, so dishes prepared with tomatoes or vinegar tend to acquire a metallic taste when they are eaten with cast aluminum. In addition to this, aluminum pans can be pretty malleable, which means that they can be scratched from drops and other kitchen accidents.

Cast iron pans are unique because they are inexpensive, and they also have a great heat retention quality. Moreover, if treated properly, they also develop a natural nonstick coating over time. Cast iron is a very heavy metal, it conducts heat poorly, it is easy to react with acidic foods, and it may also be difficult to clean if it isn't coated with enamel. It is compatible with induction cooktops, just like steel. Copper: Copper is the best conductor of heat of all the common cookware materials, however, it requires regular polishing, and therefore is prohibitively expensive for most of the people on this planet. There is no way to use it on an induction burner, either.

Easy-grip handle that is oven-safe and comfortable

Comfortable handles can have a substantial impact on the overall user experience and can differ greatly from brand to brand. Using the handle with a high angle makes it difficult to toss food while sautéing. In addition, the handle thickness must be taken into consideration. As Country Living magazine's food and crafts director and cookbook author Charlyne Mattox explained to us: "I do not like handles that are big, thick, and round." Still, some of our testers who had larger hands liked handles that were wide and rounded. Because each individual's handle preferences will be different, it is recommended that you visit an appliance store and try out a few pans so you know what you will like before you invest in one.
