Cutting boards made of plastic should be reasonably durable, especially since deep gouges and scratches make them unfit for use as food preparation surfaces. On the other hand, they shouldn't be so indestructible that a sharp knife grinds prematurely to a dull edge, just like it does on glass. A good plastic board needs to offer the perfect combination of hardness and gentleness.In order to prevent slippery foods from sliding across plastic cutting boards, the surface should not be so smooth that they behave like ice. If that is the case, cutting becomes dangerous. There should be enough texture on the board's surface so that slippery foods will remain in place as you cut them, but not so much that it feels rough to the touch.

It is also important to consider the board size options when making a purchase. Small cutting boards can come in handy when you want to quickly slice up a lemon or lime for wedges, or if you want to quickly slice up a single onion, for instance. However, you also want to make sure that there is enough space on the board so that there is enough space to accommodate larger quantities of food. You don't want things piling up and spilling off the edges. There are options out there for plastic cutting boards, but some of them only offer small and medium boards, leaving you in the lurch for the kind of cutting board you'd need to butcher a chicken. As far as size goes, rubber grips on the edges, as well as handle cutouts, are welcome, as long as they don't reduce the actual working area too much. I must say that being able to toss a plastic cutting board into the dishwasher is definitely a plus, so we considered this when evaluating the cutting boards in our test. I would not say, however, that it has been an absolute requirement. Material

For a while, most folks just assumed plastic cutting boards were more sanitary than wood. After all, they're nonporous and, in theory, easier to sanitize. The reality is more complicated. Plastic is less porous than wood and so, when new, it's easier to sanitize. But with time, as scratches develop—especially deep ones where bacteria can hide and fester—plastic becomes increasingly difficult to keep clean. Eventually, a plastic board needs to be thrown out. While wood, on the other hand, is more porous, studies have shown that fine-grained woods like maple (that are some of the best options for cutting boards) pull bacteria down into the board via capillary action, where the bacteria are trapped and eventually killed. In addition, hard wood can also take a beating before the scratches appear on the surface of the wood. Furthermore, it can be sanded so the surface can be restored to like-new condition, something you cannot do with plastic.

In spite of this, it is still helpful to keep plastic boards in the kitchen. In general, I tend to grab them when I have something that's going to be messy, such as raw meat or fish that I need to cut into smaller pieces, as well as foods like beets that stain everything they touch. Sometimes I just need a small board for a quick operation, such as halving a lemon. In comparison to wood, plastic boards are easy and quick to clean up, and do not require the maintenance that wood needs to stay in good shape, such as regular oiling. In case you didn't know, glass and marble are unacceptable materials for cutting boards. "Slightly thicker boards offer more stability, and their surfaces absorb the impact of your blade to a much greater extent than thinner boards," he points out. No matter what board you choose, we recommend picking one that is on the softer side, with a little give to it. When you have a super hard, unforgiving surface, you are going to dull your knives more quickly." It's simple, but to keep the blades sharp, you need to use a honing rod more frequently
