Overview

For delicate cookware, nonstick whisks are ideal. Using a nonstick skillet or an enameled Dutch oven, we frequently whisk and blend dishes like pan sauces or roux with them. A silicone coating on each loop makes them more gentle on pans than ordinary wire whisks.

Some nonstick whisks can feel slow, which is the exact opposite of an agile and whippy whisk. This is because they are poorly built. Eight models, ranging in price from $7.50 to around $20.00, were evaluated to identify one that combines well, won't scratch pans, feels natural to use, and doesn't tire the hands, especially when whisking for long periods of time. We needed designs that kept our hands cooler because we utilize them in hot environments. As a result, we sought out sturdy whisks that could withstand the strain of daily use, while also being easy to clean. The majority of our whisks were shaped in a traditional manner, but two of them were unique. Flat whisks can be turned into balloon whisks by twisting the knob at the end of their handle, while a silicone cage with five wide scraping blades on its long handle looks like the head of a whisk.

We began with the roux test and worked our way up to it. For several minutes, we whisked constantly to avoid lumps from forming in the roux as it thickened, using each whisk to incorporate flour into melted butter. If you've ever wondered how the whisks would work on two different cooking surfaces and at two distinct angles of approach, this is the experiment for you. Some whisks were unable to prevent or break up doughy clumps, whereas others swiftly broke up any lumps that formed. Whisks that were floppy and incapable of pushing food were undesirable, but we also didn't want stiff whisks that couldn't reach into pan corners and didn't have enough flexibility to level out the roux mixture; moderately flexible whisks were the ideal choice. There was, however, more to the story.


Buying Guide

  • To keep your hands cool, use a longer whisk.
  • Longer whisks, such as those in our array that ranged in length from 10 inches to 12.5 inches, became more useful when we worked over hot pans. Even when we held it by the tip of its handle, the shortest of these, at only 10 inches long, produced intolerably hot palms. While this whisk did keep our hands cooler, we were startled when we compared it to the front-runner, which was 12 inch longer. Because the 10-inch-long whisk's wire loops were 34 inch shorter than the front- runner's, we had to lower the angle at which we were holding the whisk, putting our hands too near the heat. When evaluating comfort, the design of the handle was an important consideration. These whisks had thin, harsh steel handles with hanging loops that jabbed us in the palm whenever we changed our grip. It was easier to hold the whisks in a variety of positions since the handles were broader, rounder, and made of softer rubber or plastic with no hanging loops. In a nonstick skillet, we used the steak's fond to reduce teriyaki sauce, and we emulsified vinaigrette in a metal bowl with the whisks. All of the whisks performed exactly the same as they did when we were making the roux.
  • Reduced Work Involved When Using A Good Whisk
  • The efficiency with which each whisk whirled the food in our following test revealed significant disparities. Because it's your hands and arms that generate the power, efficiency matters. We started by whisking 12 cup of cold heavy cream into stiff peaks—and then kept whipping it into butter, which not only exhausted our hands but also strained the wire loops as the butter formed. We had to work for more than four minutes to produce stiff peaks and another four minutes to make butter on one of the slowest models. It took the fastest model just over a minute to whisk the cream and just 112 minutes to make butter. At each step, it was a full minute faster than the next closest competitor, and using it was a breeze. One of the whisks in this test had a loop spring out of its handle as it handled the hard butter, causing it to dislodge. The leaders, on the other hand, were able to maintain their springiness and strength. In the end, we had sore arms, but also some answers to our questions.
  • Take a Look at the Whisk's Nib
  • The amount of wire loops and the arrangement of those loops are important factors in the efficiency of the whisking process. Eight loops were found on our most effective whisks, whereas four loops were found on the least effective. The arrangement of the loops at the whisks' tips was particularly fascinating. At the tip, longer whisks performed better than shorter ones because they had more space between their tallest and shortest loops, which were nearly touching each other. The more distance between the loops at the tip of a whisk, the better the whisk's speed and performance were shown to be. This structure, in combination with a high number of fairly bendy loops, not only put more wires in contact with food but also integrated more air with each stroke. We didn't have to hold the whisk at a low angle to engage the food because this tip arrangement let whisks whip well even in an almost vertical posture, which kept our hands cooler. It turned out that wire thickness and whisk weight weren't as important as we assumed they were. Our top whisk had significantly thicker loops than most of the others, despite our initial belief that a thinner loop would be preferable. While there were lighter and heavier whisks available, our favorite was a 3 ounce heavyweight that felt solid in our hands.
  • Whisks for Nonstick Pans Must Be Gentle on Pans and Long-Lasting
  • After each cooking test, we checked the pans to make sure that the whisks hadn't damaged them despite their silicone coverings. In addition, we vigorously scraped each of the whisk's loops 20 times across the cooking surfaces of brand-new nonstick skillets and then checked for scratches. All the pans were in good condition. The whisks were dropped from a height of 12 inches on the counter three times, and then put through the dishwasher and hand-washed after each use to see how durable they were. Except for the dual-purpose flat-and-balloon whisk, whose multipart handle held water, most were easy to clean and didn't trap food or liquid. To our disappointment, we received this whisk with a broken knob at the end of its handle, which serves two purposes: to keep the whisk together and to switch it from a flat to a balloon-style design. Since we had to hold both parts together to keep it from disintegrating, we were unable to properly use this whisk. Our second copy from a different retailer arrived completely smashed. Even without its fatal flaw, this whisk didn't perform well in any of our testing. Our silicone-coated whisks have a maximum temperature rating of 450 to 600 degrees Fahrenheit, which we found interesting because we frequently use them on the burner (this is because not all silicone is identical; it can have different compositions and properties). During usual use, none of the silicone loops on the whisks melted even when placed near hot cookware.
