We've all baked a few duds in our quest for the ideal muffin. We blame the recipe first when our muffins are too brown, too light, or too dry, or not domed enough, tall enough, or fluffy enough for our tastes. While there are plenty of faulty recipes out there, it's worth mentioning that our muffin pans may be the most neglected variable of them.

How heat is transferred to the dough can be a make-or-break issue in the texture of a crust, as I discovered during my pie-baking marathon. Crusts are more likely to turn out oily and dense when made with enameled ceramic or heavy stoneware, which hinder the transfer of heat. Crusts are more likely to turn out light and crisp when using tempered glass, which speeds up the process.

The same technique applies to muffin pans, albeit there are some differences. The amount of time the batter requires to bake and how deeply it browns along the edges depends on how quickly the pan transmits heat, while the texture and form of the pan itself affect the proportions of the muffin's dome.

I mixed a batch of plain muffin batter using baking powder and milk for a more neutral pH to better understand how it all works. (Alkaline batters brown more deeply, whereas acidic batters are lighter.) It's not the most delectable batter, but its simplicity emphasizes how the pan may affect browning.


Buying Guide

  • Muffin Pans Made of Aluminum
  • First, there's the normal aluminum. This is the type of muffin pan used by professional bakers. Aluminum, more so than stainless steel, is incredibly conductive, allowing mixtures to bake quickly. It also reflects light, particularly the thermal radiation that all ovens emit, which can help minimize browning—a big plus for delicate white cupcakes, but it makes muffins appear a little sad.
  • Muffin Pans with Nonstick Coating
  • The most popular type of muffin pan used by most home bakers is nonstick. Most are stainless steel underneath their polytetrafluoroethylene covering. As a result, they conduct heat more slowly, lengthening the time it takes for a batter to cook through, which improves the rise of various batters. (These muffins came out a quarter inch taller than muffins baked in an aluminum pan.) Furthermore, the black nonstick coating absorbs light, resulting in increased browning in the oven.
  • For me, the benefits of nonstick muffin tins in terms of browning and lift exceed the inconvenience of cleaning and caring for the fragile material. Washing can be especially tiresome when you've made well-endowed muffins stuffed with juicy fruits or dusted with sugar, both of which will quickly caramelize and defy Teflon's nonstick claims.
  • Muffin Pans Made of Silicone
  • Silicone is a newbie to the muffin-pan party, and it's so bright and cheerful that you can't help but want to have one.
  • On paper, it appears to be a fantastic idea. Silicone can be made to imitate aluminum's electrical and reflective qualities, as well as Teflon's nonstick capabilities. While that may be a hypothetical hurray, my feelings are decidedly gloomy. Because it's too flimsy to stand on its own, it can only be used in conjunction with a baking sheet. Not only do the muffins now require double the equipment, but they'll also always brown too much around the bottom where the silicone meets the metal.
  • The muffins rose a quarter inch less than those baked in an aluminum pan, despite the silicone cups having the same dimensions as the other pans (three inches across and just over one and a quarter inches deep). This was due to the seamless funnel shape of each cup, which allowed the muffin tops to spread more.
