Use

There are many thermoses that rely on a vacuum to slow the transfer of heat or cold from inside to outside. Imagine drinking hot coffee from a paper cup on the go, for instance. The coffee will go from boiling hot to lukewarm after a few minutes if it is placed on a table in a room with a temperature of 70 degrees. There is no question that heat is lost through the open top of the cup, however, even with a plastic cover, the rate of heat loss is almost as fast. This is due to the fact that paper and thin plastic are not great insulators. 

Heat is transferred from the vessel that holds a hot or cold liquid all the way down to the atoms that make up the vessel. In the late 1800s, researchers discovered that certain materials, such as ceramics (including glass), helped slow the transfer of heat from one place to another. It was also found that air pockets in certain materials also slowed heat transfer because they contained fewer atoms than their counterparts. The definition of a true vacuum is one in which there are no atoms present. Although this would be the ultimate insulator, it would be really expensive to create a true vacuum in a thermos. Nonetheless, a partial vacuum can be achieved without too much trouble.

Material

The large thermoses are made the same way as their smaller lunchbox counterparts; however, they have a larger capacity. They have an inner flask that holds hot or cold liquids and foods. The inner flask is enclosed within an outer shell, or container. During the manufacturing process, the upper portion of the thermos is sealed to prevent leakage. The outer container is sealed at the base in order to create a partial vacuum between the two containers, after which the air is removed from the space between the two. 

Today, thermos liners incorporate other layers and elements in order to improve insulation even further. There is, for example, an interior wall of the flask that is coated with a reflective material in order to reduce the amount of heat transfer via thermal radiation. Additionally, an additional layer of insulation can be placed on the other side of the vacuum, against the outer wall of the thermos, in order to prevent condensation on the outside of the thermos and further slow heat transfer.
