Buying Guides

Quality

In your first step, you should pay attention to the steel quality of the knives you intend to purchase. A knife set worth considering will almost always feature a set of blades that are made of some kind of steel, but the type or quality of steel can vary dramatically from set to set. As far as high carbon steel is concerned, if you are able to afford it, we recommend that you look for it. However, some budget knife sets do not have steel of this caliber. High carbon steel has a long lifespan, and it maintains a good edge for the whole duration of its use.

Stainless steel is also an option for you to consider. There are knives that are made primarily out of stainless steel or have a coating or layer of stainless steel on the surface. Both options, however, are great because stainless steel can resist corrosive damage, which means that your knife set will last much longer than it would otherwise, which is fantastic. Stainless steel also looks incredibly shiny and aesthetically pleasing in the kitchen.

Number of Knives

If you are looking for a knife set under $200, you will definitely want to think about how many knives are included. A lot of knife sets have five or so knives, which is great if you don't need a really big knife set or if you are okay with using a few versatile knives rather than having more specialized ones. The price is also often lower for these knife sets. Alternatively, you may wish to buy a knife set with ten or more blades as opposed to a knife set with fewer blades. With these sets, you will have access to a variety of specialty blades that you can use to elegantly and precisely cut through more specific foods, such as fish or certain kinds of soft fruits. In most cases, these are closer to the $200 mark, but they are usually worth your time and money if you spend a lot of time in the kitchen.

Weight

You should also take into account the knife weight you can expect from each of the blades. You might not be able to get an exact weight for every blade in some sets, but you typically can figure out how much each blade or the set as a whole weighs just by looking at one or two blades. As a rule of thumb, heavier knives are more difficult to grip for prolonged periods of time than lighter knives, such as when you are preparing a large dish. Lighter knives are easier to handle, but they may also not be quite as durable; weight is directly proportional to how thick the blade of a knife is. You can't say that one is better or worse than the other. It's just something you have to consider before making the purchase.

Material

When choosing a knife set, also consider the material and the quality of the handle. In some knife sets, the handles can be crafted from beautiful and comfortable wood that adds a nice aesthetic touch to the set as a whole; this is often matched with the wood material of the storage block. Nevertheless, if there is a wooden handle on the set, check to see if the handles are reinforced with a resin or another coating that prevents them from absorbing water. Alternatively, you might find that the handles are made from synthetic material. A set of these can either look like wood or not at all, and they are usually a little cheaper than wood sets. There is even the possibility that this might be a better choice in the long run since it is less likely that the handles over time will become damaged by water.

Lastly, make sure that each knife set comes with a storage block so that you will be able to store it correctly. In the beginning, you may think this would be an automatic inclusion with every knife set, but from time to time, there's a box set of knives that don't have a storage container or block, and this is a waste of time and money. Having well-organized storage blocks allows you to arrange your blades in an organized fashion, and also allows them to dry properly, which is crucial for maintaining the quality of the steel. Having these blocks makes it easy to find a particular knife without having to make your way through a drawer of utensils, as each block has a specific place for every blade in the collection. See our article about which knives usually come in a knife set if you would like more information regarding knife sets.
