How to choose a type of cookware

Stainless Steel

It is a well-known fact that stainless steel is one of the most popular types of cookware you'll find, and with good reason. The material won't damage your kitchen surfaces, or rust or stain, and it won't react when cooked with acidic foods. Also, the product can handle high temperatures and can be used with induction cooktops. Even though stainless steel tends to be on the pricier side, you can make pots less expensive by making the sides of the pots thinner, where high-end pots tend to have thicker sides and they are heavier overall.   

Coated Aluminum

Aluminum cookware is often anodized with a nonstick interior coating, as well as an exterior coating, which hardens the metal, gives it a colored appearance, and protects it against stains and corrosion. Generally speaking, anodized cookware has either a non-stick coating on the interior, or a thin layer of stainless steel adhered to the interior, so that none of the aluminum is visible. Cookware made from aluminum is not compatible with induction cooktops unless that cookware is covered with a disk of stainless steel on the bottom that allows the induction cooktop to recognize it. Depending on the manufacturer, you should find out whether or not non-stick aluminum cookware is dishwasher safe before buying.

Copper

Due to the fact that copper has a very high heat-responsive property, it heats up and cools down extremely quickly. It is unfortunate that it is also reactive to acidic foods, and that it will discolor after considerable use and time, so it must be maintained to keep its shine. The quality of copper cookware lies in the fact that it is made entirely from copper, with a thin coating of tin or stainless steel on the interior to make it suitable for all types of food. Low-quality copper cookware includes only a thin layer of copper on the outside of the pan, simply for appearance, while high-quality copper cookware is made entirely from copper. Cuttlefish and other copper cookware are not compatible with induction cooktops, but stainless steel cookware with a decorative copper finish should be able to be used on induction cooktops without any problems. 

Ceramic

On the other hand, ceramic nonstick pans and pots are made for use on the stovetop which are a little older than porcelain nonstick. Having an aluminum core allows for an even and rapid distribution of heat, while the exterior of the pans is nonstick, which prevents scratches and is suitable for all kinds of stove tops (including induction). While ceramic nonstick pots and pans can often be cleaned in the dishwasher, handwashing is recommended for extending their lifespan, as well as only using wooden or silicone utensils when cooking with ceramic pots and pans.

Typically, ceramic cookware comes in two distinct types: cookware that is completely comprised of ceramic, as well as cookware that has an aluminum body bonded to a coating of magnetic, silicone-based nonstick material (the coating is often called ceramic because the material is made of sand).
