Buying Guides

One of the most important factors in the success of German knives is the steel used in their construction. The focus of German knives is mainly on durability, and that is the driving force behind their steel. Steel made in Germany tends to be a little softer, in comparison to steel made in other countries. Essentially what that means is that it has a bit more flexible, and that flexibility is what allows it to withstand the rigors of the kitchen without much risk of cracking or chipping at the edge of the blade. It is the carbon content of steel that determines the hardness or elasticity of steel. For those of you who are chemists, you may know this. Steel tends to have a carbon content of around 0.5% in German steel, whereas high carbon knives have a carbon content of over 1%.

Besides its high quality, German steel also has the quality of being very high-quality stainless steel. This means that German steel is very resistant to rusting. Despite what many people believe, it is actually extremely difficult to make a decent German steel rust at all. There is a chance that it may rust if left bathing in water for a day, but I would recommend you don't try to leave it in water for a whole day. According to chemists, that stainless steel quality is due to the amount of chromium in the steel, which makes the steel very hard. The average German steel has between 14 - 16% chromium and a stainless steel that has any value in this range is considered of high quality. There is also a high content of chromium in German knives, which is the reason for their bright, shiny appearance. One of the best steels for knife making in Germany is X50CrMoV15. There are all knives in this article that are made from this material, and you will find that it is a very common material in western style knives. It has a carbon content of 0.55% and a chromium content of 15%.

Number of knives

Today, there are several different kinds of kitchen knives available, including vegetable knives, paring knives, bread knives, steak knives, chef's knives, and cleavers–you name it. You might find that a bit overwhelming when you are not sure exactly what you need for your kitchen. In this review of the best German knife brands, I'm sharing a range of knife sets that have between three and seventeen German knives in them.

If you want to have a well-equipped kitchen, at least you need a chef's knife, a utility knife (preferably serrated), and a paring knife. In this case, why do some knife sets include more than a dozen knives when you only need three? The majority of these sets come with more than one of the same kind of knife, which I like because I don't have to wash my one utility knife several times to prepare a meal because I can use three instead. There are often a few steak knives included in a set that correspond to a small dinner party or a typical size family. If you are buying knives individually or in a set, you should take your preferences into account when choosing the best number of knives that you require.

Quality

The blades of German knives are made from high-carbon stainless steel, which prevents them from rusting and corroding and allows them to remain sharp for a long period of time. German kitchen knives are less brittle than other styles, like Japanese knives, but compared to Japanese knives, they are more likely to lose their sharpness at a faster rate due to the softer steel. Even so, with proper maintenance and caring for the knives, you can expect them to last a very long time if you take good care of them.

The concept of steel having various degrees of softness, as if it were lined with feathers, is a bit strange, but hear me out. Steel gets rated on the Rockwell hardness scale in order to determine how hard it is. As the name suggests, Rockwell scale is used to measure how well a metal resists breaking when it is under tension. The typical Rockwell hardness rating of a German knife is between 56 and 58, whereas the Rockwell hardness rating of another knife will be 60 or higher-thus the reason German knives usually have softer steel.

Handle

In traditional German knives, wood is a common material. However with the advancement of technology, one should not overlook synthetic materials as a way to maintain the durability and easy-grip properties of a German knife. Another important thing that should be mentioned about German knives is that they are full tang knives. That means that the blade runs into the handle covering through to the back of the knife. The blades of Japanese knives, by contrast, are partial tangs and taper into the handles as they go into the handle.  A full tang knife not only adds to the durability of the knife, but also adds to its balance, making the handle as large as the blade, and thus adding to its overall stability. When the blade is heavier, it makes the knife easier to handle in general.

Knife block

Knife blocks are a perfect way to organize, store, and store your knives. Don't let the name fool you, however; knife blocks are far more than that. From the typical wooden blocks with slots for each knife to the magnetic strips or fixtures that hang on a wall, there are different kinds of knife blocks available. The design of knife blocks has evolved over the years so as to adhere to or enhance the overall design of your kitchen. Knife blocks are usually included in your purchase of a knife set, depending on the knife set you choose.

Dishwasher safe

It is not important whether a knife set is dishwasher safe or not, but it is always best to hand wash your knives in order to prolong the quality and lifespan of the steel. A good quality set of kitchen knives is an investment that should last decades, and you would not want to waste your money by purchasing another set of knives due to damage caused by improper dishwasher use. One important thing to keep in mind is the fact that many knife companies will void your product warranty if your knives are damaged due to being washed in a dishwasher.
